Sweet Potato Pudding

Sweet potatoes baked with butter, sugar, milk, egg, cinnamon, nutmeg, cloves, allspice, ginger, and vanilla extract.
Ingredients -
2 large Sweet Potatoes, peeled and grated (about 2 cups)
1 cup Sugar
3/4 cup Milk
2 Eggs, beaten
1/4 cup melted Butter
1/2 teaspoon Cinnamon
1/4 teaspoon Nutmeg
1/4 teaspoon Cloves
1/4 teaspoon Allspice
1/4 teaspoon Ginger
1/2 teaspoon Vanilla Extract
 
Preparation:

1. Preheat oven to 350 F.

2. In large bowl, combine sweet potatoes, sugar, milk, eggs, melted butter, cinnamon, nutmeg, cloves, allspice, ginger, and vanilla extract.

3. Spoon sweet potato mixture into greased baking dish

4. Bake 60 minutes. Stir several times during cooking.

Vegetable Peeler
Invest in a new vegetable peeler and throw away the old metal, swivel peeler. Todays peelers are much better tools and are worth the additional price.

Cooking Tip
Grating Sweet Potatoes
A regular grater will work fine for making this dish. The sweet potato will tenderize and soften just fine with a larger grate.
