Sweet Potato Crisp

Casserole style dish mixes sweet potatoes with cream cheese, apples, and cranberries. Topped with a butter, pecan and brown sugar mixture and baked until golden brown.
Ingredients -
4 Medium Sweet Potatoes, cooked, peeled and cubed
8 ounces Cream Cheese, softened
1/4 teaspoon Cinnamon
2 medium Apples, quartered
1 cup Fresh or Frozen Cranberries
1/2 cup All-Purpose Flour
1/2 cup Quick Cooking Oats
1/2 cup packed Brown Sugar
3 tablespoons cold Butter
1/4 cup chopped Pecans
 
Preparation:

1. Preheat oven to 350 F.

2. In large bowl combine sweet potatoes, softened cream cheese, and cinnamon. Stir until well blended.

3. Spread sweet potato mixture into buttered 11-inch x 7-inch baking dish.

4. Place quartered apples and cranberries in food processor, cover and process until well blended.

5. Spread apple mixture over sweet potatoes.

6. In medium bowl, combine all-purpose flour, quick cooking oats, and brown sugar.

7. Using fork, cut butter into flour until mixture reassembles coarse crumbs.

8. Stir in pecans.

9. Sprinkle pecan mixture over sweet potatoes.

10. Bake casserole uncovered for 35 to 40 minutes or until top is golden brown.

Sweet Potatoes
1 medium sweet potato equals 8-10 ounces. 4 medium sweet potatoes would be roughly 2-1/2 pounds.

Place sweet potatoes on paper towels. Prick potatoes with fork and microwave uncovered for 13-15 minutes.
