Sweet Potato Bake

Mashed sweet potatoes combined with sugar, melted butter, eggs, and milk. Potato mixture is spread into baking dish and topped with a pecan topping, baked until golden brown.
Ingredients -
2 (29 ounces) cans Sweet Potatoes in Light Syrup, drained
1/2 cup Sugar
1/2 cup Butter, melted
2 Eggs, beaten
1 teaspoon Vanilla Extract
1/3 cup Milk
1/3 cup Butter, melted
1 cup Brown Sugar
1/2 cup All-Purpose Flour
1 cup Pecan Halves
 
Preparation:

1. Preheat oven to 350 F.

2. Add sweet potatoes to large bowl, and mash.

3. Stir in sugar, ½ cup melted butter, beaten eggs, vanilla extract, and milk. Stir until smooth.

4. Spoon sweet potato mixture into large glass or ceramic baking dish. Spread evenly.

5. In small bowl, mix together 1/3 cup melted butter, brown sugar, and all-purpose flour.

6. Stir in pecan halves.

7. Spread pecan topping over sweet potatoes.

8. Bake 25-30 minutes, or until top is golden brown.

Sweet Potatoes
Substitute 2 pounds of regular sweet potatoes for the canned, if desired. The potatoes will need to be boiled or baked until tender.
