1. Preheat oven to 425 F.
2. Place potato wedges into bowl of water. Soak 10-15 minutes.
3. Drain sweet potatoes in colander and pat dry with paper towels.
4. Spray baking sheet with non-stick cooking spray.
5. Place sweet potato wedges in large zip-lock plastic bag.
6. Add olive oil, pepper, paprika, and salt to zip-lock bag. Seal and toss to coat.
7. Remove potatoes from zip-lock bag and transfer to baking sheet.
8. Arrange in single layer and bake 20 minutes.
9. Turn sweet potatoes and bake additional 20 minutes.
10. Potatoes should be golden brown. |
