1. Preheat vegetable or canola oil in deep fryer to 370 F.
2. Sprinkle sweet potatoes with salt.
3. Add eggs and water to shallow bowl, and beat together.
4. Add bread crumbs to shallow bowl.
5. Dip sweet potatoes in egg mixture and dredge in bread crumbs.
6. Carefully add sweet potatoes, a few at a time, to deep fryer.
7. Fry until golden brown.
8. Remove potato slices to plate lined with paper towels.
9. Arrange potato slices on serving platter. Serve hot.
