1. Preheat oven to 350 F.
2. Place sweet potatoes on baking sheet.
3. Bake potatoes 1 hour.
4. Remove from oven, cool slightly, peel and discard peels.
5. Slice sweet potatoes into 1/8-inch thick slices.
6. Place potato slices in large, buttered baking dish.
7. Add pecans, brown sugar, margarine, salt, and vanilla to saucepan.
8. Bring to a boil and cook 2-3 minutes.
9. Pour pecan mixture over sweet potato slices.
10. Bake 10 minutes.
