Praline Topped Sweet Potatoes

Roasted sweet potatoes in butter, pecan, brown sugar, and vanilla sauce. Dish is baked 10 minutes to combine flavors and caramelize and bring out natural sugars.
Ingredients -
8 Sweet Potatoes
2 cups chopped Pecans
1 cup of Brown Sugar
1/4 cup Margarine
Pinch of Salt
1 teaspoon Vanilla
 
Preparation:

1. Preheat oven to 350 F.

2. Place sweet potatoes on baking sheet.

3. Bake potatoes 1 hour.

4. Remove from oven, cool slightly, peel and discard peels.

5. Slice sweet potatoes into 1/8-inch thick slices.

6. Place potato slices in large, buttered baking dish.

7. Add pecans, brown sugar, margarine, salt, and vanilla to saucepan.

8. Bring to a boil and cook 2-3 minutes.

9. Pour pecan mixture over sweet potato slices.

10. Bake 10 minutes.

Praline Sauce
Substitute walnuts for pecans in a pinch. Lower the amount of brown sugar called for in this recipe to reduce calories.
