1. Preheat oven to 350 F.
2. Butter the bottom and sides of a 2-quart casserole dish.
3. Combine sweet potatoes, white sugar, vanilla, beaten eggs, and heavy cream in mixing bowl.
4. Stir to blend. Spoon sweet potato mixture into casserole and spread evenly.
5. Combine butter, brown sugar, flour and pecans in medium bowl. With fork, mix until crumbly.
6. Sprinkle pecan mixture over sweet potatoes.
7. Bake 30 minutes. |
