Praline Sweet Potatoes

Casserole style dish features sweet potatoes blended with sugar, vanilla, eggs, and heavy cream. Topped with a mixture of brown sugar, butter, flour and pecans.
Ingredients -
4 cups Mashed Sweet Potatoes
1/2 cup White Sugar
2 tablespoons Vanilla Extract
4 Eggs, beaten
1/2 pint Heavy Cream
1/4 pound Butter
1 cup packed Brown Sugar
1/2 cup All-Purpose Flour
1-1/4 cups chopped Pecans
 
Preparation:

1. Preheat oven to 350 F.

2. Butter the bottom and sides of a 2-quart casserole dish.

3. Combine sweet potatoes, white sugar, vanilla, beaten eggs, and heavy cream in mixing bowl.

4. Stir to blend. Spoon sweet potato mixture into casserole and spread evenly.

5. Combine butter, brown sugar, flour and pecans in medium bowl. With fork, mix until crumbly.

6. Sprinkle pecan mixture over sweet potatoes.

7. Bake 30 minutes.

Do not refrigerate sweet potatoes. The potatoes turn tough and bland, as the sugar converts to starch.
