Orange Rum Sweet Potatoes

Simple sweet potato recipe, perfect for the Halloween holiday. Recipe combines sweet potatoes with orange flavored rum, salt and brown sugar. Sweet potatoes are baked until tender and golden.
Ingredients -
1 large can Sweet Potatoes, drained and cut in thick strips
1/4 cup Butter
2 tablespoons Orange Flavored Rum
1/4 teaspoon Kosher Salt
1/3 cup Light Brown Sugar
 
Preparation:

1. Preheat oven to 350 F.

2. Arrange sweet potato strips in single layer in shallow baking dish.

3. In small saucepan, combine butter, orange flavored rum, kosher salt, and light brown sugar.

4. Bring to a boil and simmer 5 minutes.

5. Pour rum mixture over sweet potatoes and sprinkle with additional brown sugar.

6. Bake 15 minutes.

Sweet potatoes and yams should have firm, smooth skin, and be free of bruises. Avoid potatoes that are soft to the touch, and do not appear freshly harvested.

Steaming Sweet Potatoes
Place sweet potatoes in steamer basket. Cook 15 minutes. A knife should easily slip into the flesh when cooked to the right degree of doneness.
