Orange Baked Sweet Potatoes

Sweet potato and orange slices covered in orange butter and baked 35-40 minutes.
Ingredients -
5 or 6 Medium Sweet Potatoes, cooked, peeled and halved
1 peeled Orange, thinly sliced
1 teaspoon shredded Orange Peel
2/3 cup Dark Corn Syrup
1/4 cup Butter
1/2 teaspoon Salt
 
Preparation:

1. Preheat oven to 350 F.

2. Arrange sweet potatoes and orange slices in large baking dish.

3. Add orange peel, dark corn syrup, butter and salt to small saucepan.

4. Bring to boil over medium high heat. Reduce heat to low and simmer, uncovered, for 5 minutes.

5. Pour orange butter over sweet potato and orange slices.

6. Bake 35 to 40 minutes.

Storing Sweet Potatoes
Ideally, sweet potatoes should be stored at 50 F., in a cool, dry spot. Sweet potatoes will keep in ideal conditions for up to a month.

Cooking Tip
Butter and Dark Corn Syrup
Do not substitute margarine for butter or light corn syrup for the dark corn syrup. The results and flavors suffer too greatly.
