Old Fashioned Sweet Potato Pudding

Classic sweet potato pudding recipe combines grated sweet potatoes with butter and milk cooked over low heat. Sweet potato mixture add to eggs, salt, cloves, sugar, allspice and dark syrup. Casserole is baked several hours to achieve soft pudding texture. Served with whipped cream.
Ingredients -
2 Eggs, beaten
1/3 cup Sugar
1/2 teaspoon Salt
3/4 teaspoon Allspice
1/4 teaspoon Cloves
1/4 cup Dark Syrup
2 cups Milk, hot
2 cups grated Sweet Potatoes
1/3 cup Butter
Whipped Cream
 
Preparation:

1. Preheat oven to 300 F.

2. In a large bowl combine beaten eggs with sugar, salt, allspice, cloves and dark syrup.

3. In a small saucepan, combine milk, sweet potatoes, and butter. Cook on medium heat until sweet potatoes are heated through.

4. Add potatoes to syrup mixture.

5. Pour mixture into greased casserole dish.

6. Bake 2 hours.

7. Top individual servings with whip cream.

Homemade, unsweetened is the perfect choice for this recipe. A pre made unsweetened or sweetened product is a suitable substitute.
