Mashed Sweet Potatoes And Apples

Sweet potatoes are baked until tender. The flesh is removed and combined with sweet applesauce, salt and topped with crushed apple chips.
Ingredients -
4 large Sweet Potatoes, scrubbed lightly
1 cup Cinnamon Applesauce
1/4 teaspoon Salt
1/2 cup Dried Apple Chips, broken in large pieces
 
Preparation:

1. Preheat oven to 450 F.

2. Pierce the sweet potatoes with fork in several places.

3. Place sweet potatoes on oven rack.

4. Bake 45 minutes and remove from oven.

5. Halve potatoes lengthwise.

6. Scoop potato flesh from skins and place in serving bowl.

7. Mash potato flesh. Stir in applesauce and salt.

8. Top with crushed apple chips.

It is best to avoid sweet potatoes with blemishes or bad spots. Sweet potatoes deteriorate rapidly and blemishes can indicate an unpleasant flavor.

Choose potatoes that are similar in size for even cooking, preferably smaller to medium size sweet potatoes. Look for potatoes that are firm and not wrinkled.
