Mashed Sweet Potatoes

Simple and delicious recipe for mashed sweet potatoes. The perfect dish for any occasion, its also a great starting point for experimenting and creating your own signature dish.
Ingredients -
1 large Sweet Potato, cut into 1-1/2 inch chunks
1 teaspoon Canola Oil
1 medium Onion, sliced
1/2 teaspoon Salt
1/4 teaspoon Pepper
pinch Ground Cloves
 
Preparation:

1. Add sweet potato chunks to large saucepan. Cover sweet potatoes with water and bring to boil.

2. Boil 15 minutes or until sweet potatoes pierce easily with fork.

3. Drain sweet potatoes in colander and set aside.

4. Heat canola oil in large skillet over medium low heat. Add onions and sauté until onions caramelize and turn golden brown.

5. Place sweet potatoes and onions in food processor. Add salt, pepper and cloves. Pulse until desired consistency.

Caramelizing Onion
The caramelizing process is best achieved if the onions are sauteed over low heat for a long time. It is a good idea to constantly stir them so they don't stick and burn and cook evenly.

Store sweet potatoes in a cool place away from direct light. Place in a basket or bowl that allows air circulation.
