Maple Sweet Potatoes With Pecans

Sweet potatoes tossed in syrup, balsamic vinegar and butter. Baked an hour or until golden brown, and garnished with toasted pecans.
Ingredients -
1/2 cup Freshly Toasted Pecan Halves
1/4 cup Maple Syrup
1/4 cup Unsalted Butter, melted
1 tablespoon Balsamic Vinegar
2-1/2 pounds Sweet Potatoes, cleaned, ends trimmed, halved lengthwise
1/2 teaspoon Coarse Sea Salt or Kosher Salt
Ground Pepper
 
Preparation:

1. Heat oven to 400 F.

2. In small bowl, whisk maple syrup, unsalted butter, and balsamic vinegar.

3. Cut each sweet potato half into 3 long wedges.

4. In large bowl, toss sweet potatoes with maple syrup mixture.

5. Arrange potatoes on roasting pan.

6. Roast 60 minutes. Brush with excess maple syrup mixture every 15 minutes.

7. Remove from oven and transfer potatoes to serving platter.

8. Sprinkle potatoes with salt and pepper.

9. Garnish with toasted pecan halves.

Yams
In the United States the terms sweet potato and yam are largely interchangeable. Outside the states yams are a tuber that is considerably moister than sweet potatoes.
