Maple Cinnamon Mashed Sweet Potatoes

Classic mashed sweet potato recipe. This is a holiday treat that can be enjoyed year round. Sweet potatoes mashed with cinnamon, half-and-half, maple syrup, salt and butter.
Ingredients -
3 to 4 medium Sweet Potatoes, about 2 pounds
1/4 teaspoon Salt
2 tablespoons Butter
2 tablespoons Maple Syrup
1 teaspoon Cinnamon, to taste
3 to 4 tablespoons Half-and-Half
 
Preparation:

1. Add sweet potatoes to saucepan. Cover with water. Bring to a boil. Gently boil until potatoes are tender.

2. Remove sweet potatoes, drain in colander. Peel sweet potatoes and discard peels.

3. Mash potato pulp with salt, butter, and maple syrup to desired consistency.

4. Fold in cinnamon and half-and-half.

Gradually add half-and-half to the sweet potatoes to achieve desired consistency. You can substitute milk or cream for the half-and-half.

When selecting fresh sweet potatoes, choose those that are clean, round, smooth, firm and plump.
