1. Preheat gas or charcoal grill to medium heat.
2. Add the extra virgin olive oil and chopped fresh thyme to small bowl. Whisk to blend.
3. Add the sweet potato rounds, onion wedges and bell pepper strips to large bowl.
4. Toss with 1/2 of the extra virgin olive oil and fresh thyme mixture.
5. Grill vegetables over direct heat until tender and slightly charred.
6. Remove vegetables from grill to platter.
7. Add apple cider to remaining oil and thyme mixture. Whisk to combine.
8. Season the thyme vinaigrette with coarse salt and fresh ground black pepper.
9. Drizzle vinaigrette over vegetables.
