Grilled Sweet Potatoes with Onion, Bell Pepper and Thyme Vinaigrette

 
Ingredients -
1/2 cup Extra Virgin Olive Oil
1-1/2 tablespoon chopped Fresh Thyme
2 pounds Sweet Potatoes, peeled and cut crosswise into 1/2-inch-thick rounds
1 White or Yellow Onion, cut into (8 to 10) 1/2-inch-thick wedges
1 Red Bell Pepper cut into thin strips
2 tablespoons Apple Cider Vinegar
Coarse Salt
Fresh Ground Black Pepper
 
Preparation:

1. Preheat gas or charcoal grill to medium heat.

2. Add the extra virgin olive oil and chopped fresh thyme to small bowl. Whisk to blend.

3. Add the sweet potato rounds, onion wedges and bell pepper strips to large bowl.

4. Toss with 1/2 of the extra virgin olive oil and fresh thyme mixture.

5. Grill vegetables over direct heat until tender and slightly charred.

6. Remove vegetables from grill to platter.

7. Add apple cider to remaining oil and thyme mixture. Whisk to combine.

8. Season the thyme vinaigrette with coarse salt and fresh ground black pepper.

9. Drizzle vinaigrette over vegetables.
