Easy Sweet Potato Casserole

Mashed sweet potatoes combined with sugar, butter and milk. Topped with a mixture of crushed cornflakes, pecans, and butter and baked until lightly browned.
Ingredients -
2 pounds Mashed Sweet Potatoes
2 Eggs
1-1/2 cups Sugar
1/4 cup Butter
1/3 cup Sweetened Condensed Milk
1 cup crushed Cornflakes Cereal
1/2 cup chopped Pecans
1/4 cup Butter
2 tablespoons Brown Sugar
 
Preparation:

1. Preheat oven to 350 F.

2. In a medium bowl, combine sweet potatoes, sugar, ¼ cup butter and milk.

3. Stir until well blended.

4. Spray non-stick cooking spray into large 2-quart casserole dish.

5. Spoon sweet potato mixture into casserole dish.

6. Bake 15 minutes.

7. Combine cornflakes, chopped pecans, ¼ cup butter and brown sugar.

8. Sprinkle cornflake mixture over baked sweet potatoes.

9. Bake additional 15 minutes or until lightly browned.

Sweet Potato Puree
Scrub the sweet potato under cold running water and cook by steaming, boiling or baking. Peel the potato and place the flesh in a food processor or blender for pureeing.

Choose sweet potatoes that feel heavy for their size. This indicates they are moist inside. Look for potatoes that are deep orange and void of any blemishes and bruises.
