Cinnamon Roasted Sweet Potatoes

Roasted sweet potato casserole dish. Sweet potatoes topped with brown sugar, cinnamon, seasoned with salt and pepper and baked until tender and golden brown.
Ingredients -
1/4 cup Vegetable Oil
2 pounds Sweet Potatoes, peeled and sliced
2 tablespoons Brown Sugar
1 teaspoon Ground Cinnamon
3/4 teaspoon Salt
1 pinch Fresh Ground Pepper
1 tablespoon Fresh Lime Juice
 
Preparation:

1. Preheat oven to 375 F.

2. Pour vegetable into bottom of 9-inch x 13-inch baking dish. Heat in oven about 5 minutes.

3. Remove baking dish from oven and add sweet potatoes.

4. Bake sweet potatoes 20 minutes, turning after 10 minutes baking time.

5. Combine brown sugar, cinnamon, salt and pepper in a small bowl.

6. After baking, sprinkle sweet potatoes with brown sugar mixture.

7. Return sweet potatoes to the oven and bake additional 10 minutes.

8. Stir potatoes as necessary during final baking time to insure they cook evenly. Potatoes should be brown and begin crisping.

9. Remove baking dish from oven.

10. Remove potatoes to paper towels to drain.

11. Transfer to serving dish. Sprinkle sweet potatoes with fresh lime juice.
