Cashew Peach Sweet Potatoes

Sweet potato casserole features brown sugar, cashews, and ginger. Topped with peaches and baked until golden brown.
Ingredients -
6 medium Sweet Potatoes, boiled until tender, drained, peeled and cubed
1/2 cup packed Brown Sugar
1/3 cup coarsely chopped Cashews
1/2 teaspoon Salt
1/4 teaspoon Ginger
1 can (15-1/4 ounces) sliced Peaches, drained
3 tablespoons Butter
 
Preparation:

1. Preheat oven to 350 F.

2. Combine brown sugar, cashews, salt and ginger in small bowl.

3. Spoon half the sweet potatoes into 11-inch x 7-inch baking dish.

4. Top sweet potatoes with half the peaches and ½ brown sugar mixture.

5. Repeat layers.

6. Dot the top of casserole with butter.

7. Cover with foil and bake 30 minutes.

8. Remove foil and bake additional 10 minutes.

You can usually find sweet potatoes in stores year round, however they are most readily available from in the fall, winter and spring.

Storing Sweet Potatoes
A well ventilated, cool, dark place is the best location for storing sweet potatoes. Stored correctly they will keep for up to two weeks.
