1. Preheat oven to 350 F.
2. Combine brown sugar, cashews, salt and ginger in small bowl.
3. Spoon half the sweet potatoes into 11-inch x 7-inch baking dish.
4. Top sweet potatoes with half the peaches and ½ brown sugar mixture.
5. Repeat layers.
6. Dot the top of casserole with butter.
7. Cover with foil and bake 30 minutes.
8. Remove foil and bake additional 10 minutes.
