Caramel Glazed Sweet Potatoes

Simple and quick recipe for sweet potato main r side dish. Boiled sweet potatoes cubes are boiled, drained and then sauteed with butter and brown sugar. If desired, Lower the sugar in the recipe to reduce calories and fat.
Ingredients -
2 pounds Sweet Potatoes, peeled, cut into 1-inch cubes
1/4 cup Butter
1/2 cup firmly packed Brown Sugar
 
Preparation:

1. Add sweet potato pieces to large saucepan. Cover with water. Bring to a boil.

2. Cover saucepan, reduce heat to low, and simmer 10-12 minutes.

3. Drain potatoes in colander.

4. Add butter and brown sugar to large skillet. Melt butter and brown sugar over medium heat, stirring occasionally.

5. Add potatoes to skillet. Saute 10 minutes, stirring occasionally.

Pecans
For a nice change add toasted pecans to this dish. Place pecans on baking sheet and toast on very low temperature until the aroma of nuts fills the kitchen usually around 10-15 minutes.

Sweet Potatoes
Handle sweet potatoes carefully to avoid bruising. Do not refrigerate sweet potatoes. Store in a cool dry spot.
