Brandied Sweet Potatoes with Orange and Pecans

 
Ingredients -
1 pound Sweet Potatoes, peeled
1/2 stick of Unsalted Butter
Juice of 3 Fresh Navel Oranges
1/2 cup Fresh Honey
1/4 cup Brandy or Cognac
1/2 cup chopped Toasted Pecans
 
Preparation:

1. Place peeled potatoes in large saucepan or stockpot.

2. Add enough water to cover by 2 inches. Bring to a boil and cook approximately 30 minutes or until fork tender.

3. Place in colander to drain, and cool.

4. Preheat the oven to 350 F.

5. Grease a baking dish with butter.

6. Place sweet potatoes in prepared dish and dot with butter.

7. Add fresh orange juice, fresh honey and brandy to small bowl. Stir to combine.

8. Pour orange juice mixture over potatoes. Sprinkle with toasted pecans.

9. Bake 30 minutes in preheated oven.
