Baked Sweet Potatoes With Raisins And Pecans

Sweet potato pieces roasted with butter, maple syrup, pecans and raisins. Tender sweet potatoes make a wonderful side dish. Potatoes can be placed under the broiler a few extra minutes to bring out natural sugars and caramelize.
Ingredients -
1-2/3 Sweet Potatoes, peeled and cubed
1/2 ounce chopped Pecans
1/2 ounce Raisins
1 tablespoon and 1 teaspoon Butter, melted
2 tablespoons and 2 teaspoons Maple Syrup
2 tablespoons and 2 teaspoons Water
 
Preparation:

1. Preheat oven to 400 F.

2. Spread potato cubes in single layer in large baking dish.

3. Sprinkle sweet potatoes with pecans and raisins.

4. Combine butter, maple syrup, and water in small bowl.

5. Pour syrup mixture over sweet potatoes.

6. Cover baking dish with aluminum foil.

7. Bake 50-60 minutes. Sweet potatoes should be tender.

You could substitute for unsalted or salted dry roasted peanuts or walnut pieces, if pecans are not readily available.
