Apple Filled Sweet Potatoes

Sweet potato shells filled with mixture of sweet potato pulp, chopped apples, apple juice concentrate ground cinnamon and ground nutmeg.
Ingredients -
2 small Sweet Potatoes or Yams
1 Golden Delicious Apple, peeled, cored, chopped
5 tablespoons Frozen Apple Juice Concentrate, thawed
1/2 teaspoon Ground Cinnamon
1/8 teaspoon Ground Nutmeg
 
Preparation:

1. Preheat oven to 400 F.

2. Pierce potatoes with fork and bake 60 minutes.

3. Remove from oven. Cool.

4. Cut sweet potatoes lengthwise in half.

5. Scoop out sweet potato pulp leaving ¼” thick shells. Reserve pulp.

6. Microwave apple in microwave dish covered with plastic wrap for 90 seconds. Let apple sit 10 minutes.

7. In a small bowl, combine apple juice concentrate, cinnamon, and nutmeg. Mix well.

8. Add apple to apple juice mixture. Stir to coat.

9. Stuff sweet potatoes with apple mixture.

10. Preheat broiler.

11. Place sweet potato halves on baking sheet.

12. Broil 5 minutes. Tops should be lightly browned.
